La pancetta croccante, poi, non \u00e8 un vezzo: \u00e8 il contrasto che salva il boccone, perch\u00e9 porta sale, grasso e quella parte \u201ctostata\u201d che alla zucca serve come l\u2019aria.<\/p>\n<h2>Gnocchi con crema di zucca, la ricetta con pancetta croccante<\/h2>\n<p>Qui la cena si decide in due mosse: una zucca asciutta e una pancetta croccante sul serio. Io preferisco la zucca delica o mantovana, perch\u00e9 frulla liscia e ha dolcezza pulita. Questo passaggio sembra lungo, ma \u00e8 la parte tecnica: in forno l\u2019acqua evapora e la polpa si concentra. Se la lessi, devi poi inseguire la densit\u00e0 con formaggi o panna.<\/p>\n<p>Intanto, in una padella antiaderente metto la pancetta a freddo e la lascio andare a fiamma media. Non aggiungo olio: il grasso deve uscire piano e renderla croccante. Regolo di sale, pepe e una grattata di noce moscata. Se la vuoi pi\u00f9 setosa, aggiungi Parmigiano fuori dal fuoco: emulsiona e lega senza coprire.<\/p>\n<p>Gli gnocchi li butto in acqua salata a bollore pieno e li scolo appena salgono, senza lasciarli galleggiare a lungo. Li salto subito nella crema di zucca con un goccio d\u2019acqua di cottura, giusto per farli \u201cscivolare\u201d e lucidarli.
