Il riso d\u00e0 struttura e saziet\u00e0, la melanzana aggiunge volume con poche calorie, e il condimento pu\u00f2 restare controllato senza perdere gusto. In media, una barchetta ben farcita (mezza melanzana grande) sta intorno alle 250\u2013330 kcal, a seconda di quanto olio usi e se aggiungi formaggio. Se resti su 1 cucchiaino d\u2019olio a porzione e un formaggio \u201cda aroma\u201d (non da colata), sei nel range basso. Le spolvero con un pizzico di sale e le metto in teglia con un filo d\u2019olio solo sul fondo: 20 minuti in forno preriscaldato a 200 gradi e la polpa inizia a cedere. Questo passaggio \u00e8 la chiave: <strong>cuoci la melanzana prima, cos\u00ec non \u201cbeve\u201d tutto dopo.<\/strong><\/p>\n<p>Intanto cuocio il riso in acqua salata e lo scolo al dente, perch\u00e9 finir\u00e0 in forno. Quando le melanzane sono morbide, scavo la polpa con un cucchiaio lasciando un bordo di circa mezzo centimetro: la barchetta deve restare solida. <strong>Trito la polpa e la passo in padella con aglio<\/strong> (se lo vuoi) e passata di pomodoro per 6\u20138 minuti, giusto il tempo di far evaporare l\u2019acqua in eccesso. Fuori dal fuoco unisco il riso, pepe, erbe e Parmigiano.
