Non parlo delle versioni \u201cda festa grande\u201d con creme e amarene, ma di quelle frittelle rotonde, piccole, che quando le apri sono piene d\u2019aria e vapore e ti scottano appena le avvicini al piatto.<\/strong><\/p>\n<p>La perfetta riuscita delle zeppole dipende da due dettagli che in casa si sottovalutano sempre: la densit\u00e0 dell\u2019impasto e la temperatura dell\u2019olio. Se l\u2019impasto \u00e8 troppo liquido, le <strong>zeppoline si spatasciano<\/strong> e si bevono tutto. Se \u00e8 timido, il dolce assorbe grasso e perde leggerezza; se \u00e8 troppo caldo, fai colore fuori e crudo dentro. Per questo \u201cdue minuti\u201d non significa fare di fretta: significa avere una ricetta che non ti costringe a impastare mezz\u2019ora e aspettare una lievitazione infinita.<\/p>\n<h2>Zeppoline desset top! La Ricetta<\/h2>\n<p>Come dolce da fine pasto, le zeppoline funzionano perch\u00e9 sono immediate: non richiedono tagli, non richiedono porzioni perfette, non chiedono nemmeno una forchetta. Arrivano calde, e quella crosticina sottile che si forma in frittura fa da guscio a un interno soffice e umido. Lo zucchero, per\u00f2, va trattato con criterio: se lo versi troppo presto, si scioglie e diventa una glassa appiccicosa; se aspetti troppo, non aderisce. Aggiungo sale e scorza di limone. Poi verso farina e lievito setacciati insieme, poco per volta. Qui il test \u00e8 pratico: l\u2019impasto deve cadere a \u201cnastro spesso\u201d dal cucchiaio, non scivolare come una crema. Se \u00e8 troppo compatto, lo ammorbidisco con un cucchiaio d\u2019acqua; se \u00e8 troppo morbido, una spolverata di farina, ma senza inseguire la perfezione: la frittura sistema molto.<\/p>\n<p>Scaldo l\u2019olio in un pentolino o in una padella dai bordi alti, con almeno 3\u20134 cm di profondit\u00e0<strong>. La temperatura ideale sta intorno ai 170\u2013175 gradi<\/strong>: se non hai il termometro, fai la prova con una goccia d\u2019impasto. Deve salire in superficie in pochi secondi e sfrigolare con decisione, senza scurire subito.
