Il punto \u00e8 che il tofu non nasce per stupire da solo: nasce per prendere sapore e diventare struttura.<\/strong><\/p>\n<p>E dal punto di vista nutrizionale \u00e8 tutt\u2019altro che un riempitivo: \u00e8 una fonte di proteine vegetali, con pochi grassi saturi, e pu\u00f2 diventare una soluzione concreta quando vuoi un piatto saziante senza appesantirti.<\/p>\n<p style=\"text-align: center;\"><script src=\"https:\/\/pl27810932.effectivegatecpm.com\/db\/b2\/2a\/dbb22a552a06ca782264a09281109497.js\"><\/script><\/p>\n<p>Attenzione per\u00f2 a non trattarlo come un formaggio: lo tagli, lo scaldi e pretendi carattere. Invece va lavorato, asciugato, condito con criterio. Nelle polpette questo gioco riesce meglio che altrove, perch\u00e9 puoi costruire consistenza e gusto nello stesso gesto.<\/p>\n<h2>Polpette al tofu veg o vegetariane: la ricetta<\/h2>\n<p>Le polpette di tofu vincono per una ragione pratica: si prestano al meal prep senza perdere dignit\u00e0. Il tofu, se ben pressato, regge la cottura e non si sfalda; in pi\u00f9, con un legante semplice e un ingrediente aromatico deciso, diventa un secondo che sta in piedi anche il giorno dopo. A pranzo funzionano perch\u00e9 ti danno proteine e, se le abbini a verdure e una quota di <strong>carboidrati<\/strong> \u201c<strong>puliti<\/strong>\u201d (pane integrale, riso, patate), hai un piatto completo senza la sensazione di \u201cspuntino travestito\u201d.<\/p>\n<p><strong>Il trucco \u00e8 non renderle tristi<\/strong>: serve umami. Io lo tiro fuori con salsa di soia o tamari, un po\u2019 di senape, e spezie che scaldano (paprika, pepe, aglio). Se vuoi un gusto pi\u00f9 mediterraneo: capperi tritati e scorza di limone. Lo avvolgo in carta cucina e lo schiaccio con un peso per 10 minuti. Poi lo sbriciolo con le mani in una ciotola: deve diventare granuloso, non crema. Aggiungo salsa di soia, senape, spezie, aglio ed erbe. Mescolo e lascio riposare 2 minuti: il tofu prende sapore subito, ma quel minuto fa la differenza.<\/p>\n<p style=\"text-align: center;\"><script async=\"async\" data-cfasync=\"false\" src=\"https:\/\/pl22692455.effectivegatecpm.com\/884d74dcfb1a31d043e0df900773c86c\/invoke.js\"><\/script><\/p>\n<div id=\"container-884d74dcfb1a31d043e0df900773c86c\"><\/div>\n<p><strong>Unisco l\u2019uovo<\/strong> (<strong>o la pastella di farina di ceci<\/strong>) e poi il pangrattato poco alla volta: mi fermo quando l\u2019impasto sta insieme senza essere duro. Se stringi una pallina e resta compatta, ci siamo. In alternativa,<strong> forno ventilato a 200 gradi per 15\u201318 minuti<\/strong>, girandole a met\u00e0. Se le vuoi pi\u00f9 asciutte e regolari:<strong> friggitrice ad aria a 190 gradi per 10\u201312 minuti<\/strong>.<\/p>\n<p>Quelle che avanzano conservale in frigo in un contenitore chiuso e scaldale in padella due minuti.
