Ma soprattutto \u00e8 una piccola lezione di chimica domestica: zucchero a velo con micro-dose di acqua e una pellicola che si asciuga per evaporazione, sigilla la superficie e trattiene aromi e decorazioni.<\/p>\n<p>Se sbagli l\u2019idratazione, la glassa cola e resta appiccicosa; se la azzecchi, si stende liscia e asciuga con un effetto pulito, da biscotto \u201cda regalo\u201d.<\/p>\n<h2>Glassa per i biscotti, questa s\u00ec che \u00e8 ha consistenza giusta<\/h2>\n<p>La glassa all\u2019acqua \u00e8 semplice, ma non \u00e8 banale. Il segreto sta in due dettagli che fanno la differenza: lo zucchero a velo deve essere setacciato (altrimenti ti porti dietro grumi che sembrano sabbia), e l\u2019acqua va dosata come un profumo, non come un bicchiere. La parte interessante \u00e8 che puoi farla \u201csu misura\u201d in base a cosa vuoi ottenere: una copertura sottile e trasparente per lasciare vedere il biscotto sotto, oppure una glassa pi\u00f9 piena e bianca, da decorazione netta.<\/p>\n<p>E poi c\u2019\u00e8 la questione gusto: l\u2019acqua non ha sapore, quindi il carattere lo decidi tu. Bastano poche gocce di limone per dare pulizia e aiutare l\u2019asciugatura; un cucchiaino di acqua di fiori d\u2019arancio per una nota da pasticceria; una punta di cannella o zenzero per trasformarla in glassa \u201cda t\u00e8\u201d senza aggiungere calorie extra. \u00c8 qui che la glassa all\u2019acqua diventa davvero utile: \u00e8 un veicolo di aroma, leggero e controllabile.<\/p>\n<p>Gli ingredienti che ci serviranno, dunque, sono i seguenti<\/p>\n<p>\u2022 120 g di zucchero a velo, setacciato<br \/>\n\u2022 18\u201325 g di acqua (si parte bassi e si regola)<br \/>\n\u2022 \u00bd cucchiaino di succo di limone oppure 1 cucchiaino di acqua di fiori d\u2019arancio\/vaniglia (facoltativo)<br \/>\n\u2022 un pizzico di sale fino (facoltativo, esalta l\u2019aroma)<br \/>\n\u2022 colorante in gel o in polvere (facoltativo)<\/p>\n<h3>Ecco come prepararla (senza grumi, senza stress)<\/h3>\n<p>Versa lo zucchero a velo setacciato in una ciotola. Aggiungi l\u2019acqua poco per volta: prima un cucchiaio scarso, poi inizi a \u201ccapire\u201d la glassa. Mescola con cucchiaino o frustina, ma con un gesto compatto: schiaccia e incorpora, non montare. Se inglobi aria, rischi microbolle che si vedono quando asciuga.<\/p>\n<p>La consistenza giusta \u00e8 quella\u00a0 \u201ca nastro\u201d:<strong> sollevi il cucchiaino e la glassa ricade formando una striscia che rientra nella massa in circa 8\u201310 secondi<\/strong>. Se sparisce in 2\u20133 secondi \u00e8 troppo liquida: aggiungi zucchero a velo un cucchiaio alla volta. Stendi sui biscotti freddi con un cucchiaino, oppure trasferisci in una sac \u00e0 poche con foro piccolo se vuoi righe e bordi pi\u00f9 puliti. Lasciali su griglia o carta forno senza toccarli: uno strato sottile asciuga in 20\u201340 minuti, uno spesso pu\u00f2 volerci 1\u20132 ore.
