Non richiede il forno, non richiede pazienza per la lievitazione, e si pu\u00f2 preparare il giorno prima. L\u2019ideale per chi ha ospiti e non vuole passare l\u2019ultima ora in cucina.<\/strong><\/p>\n<p>Il suo segreto \u00e8 la consistenza: deve essere soda al punto giusto, ma sciogliersi in bocca al primo assaggio. N\u00e9 troppo dura (colpa della colla di pesce in eccesso), n\u00e9 troppo liquida (colpa di una gelatina insufficiente).<\/p>\n<p>La ricetta originale \u00e8 piemontese, ma oggi la si trova in tutte le regioni, declinata in mille varianti. Quella classica, per\u00f2, resta la migliore: panna, zucchero, vaniglia e quel tocco di caramello che la rende inconfondibile.<\/p>\n<h2>Panna cotta, la ricetta per non sbagliare!<\/h2>\n<p>La panna fresca deve essere di ottima qualit\u00e0, con un alto tenore di grassi. La vaniglia, meglio la stecca che l\u2019estratto, perch\u00e9 i semini neri danno un sapore pi\u00f9 intenso e un aspetto pi\u00f9 rustico. La colla di pesce va ammollata in acqua fredda e strizzata bene prima di scioglierla. Il caramello, infine, va fatto con pazienza, senza mescolare, solo ruotando il pentolino.<\/p>\n<p>Gli ingredienti che ci serviranno sono solo i seguenti:<\/p>\n<ul>\n<li>500 ml di panna fresca (almeno 35% di grassi)<\/li>\n<li>100 g di zucchero semolato<\/li>\n<li>1 stecca di vaniglia (o 1 cucchiaino di estratto)<\/li>\n<li>8 g di colla di pesce (4 fogli)<\/li>\n<\/ul>\n<p><strong>Per il caramello<\/strong>: 100 g di zucchero, 50 ml di acqua<\/p>\n<h3>Il procedimento per una panna cotta perfetta<\/h3>\n<p>Mettere la colla di pesce in ammollo in acqua fredda per 10 minuti. In un pentolino, versare la panna, lo zucchero e i semini della stecca di vaniglia (o l\u2019estratto). Scaldare a fuoco dolce, mescolando, fino a quando lo zucchero si \u00e8 sciolto. La panna non deve bollire. Spegnere, aggiungere la colla di pesce ben strizzata e mescolare fino a completo scioglimento.<strong> Versare il composto in stampini monoporzione<\/strong> (meglio se di silicone, pi\u00f9 facili da sformare) e mettere in frigorifero per almeno 4 ore, meglio una notte. Per sformare la panna cotta, passare uno stampo nell\u2019acqua calda per qualche secondo e capovolgere sul piatto. <strong>Si conserva in frigo per 2-3 giorni<\/strong>. La prima volta che l\u2019ho fatta, l\u2019ho servita con una salsa ai frutti di bosco.
