Lasciano in bocca una sensazione di freschezza che li rende perfetti per la colazione, per la merenda, o per accompagnare una tazza di t\u00e8 nel pomeriggio.<\/strong><\/p>\n<p>L\u2019impasto \u00e8 una frolla classica, ma con una marcia in pi\u00f9: la scorza di limone non si sente, esplode. Il segreto \u00e8 usare limoni non trattati e grattugiarli con cura, senza prendere la parte bianca che amareggia.<\/p>\n<p>La prima volta che li ho provati, non credevo che con cos\u00ec pochi ingredienti potesse venire qualcosa di cos\u00ec buono. E invece s\u00ec. E la casa si riempie di un profumo che non assomiglia a nessun altro.<\/p>\n<h2>Pochi ingredienti, ma la qualit\u00e0 fa la differenza<\/h2>\n<p>Per questi biscotti non servono uova, n\u00e9 burro in quantit\u00e0 industriale. La ricetta \u00e8 leggera, quasi essenziale. Il limone deve essere fresco e profumato, la farina deve essere setacciata, lo zucchero a velo evita la grana. E poi un pizzico di sale, che con il limone funziona sempre.<\/p>\n<p>Ecco gli ingredienti:<\/p>\n<ul>\n<li>250 g di farina 00<\/li>\n<li>100 g di zucchero a velo<\/li>\n<li>100 g di burro freddo a cubetti<\/li>\n<li>1 tuorlo<\/li>\n<li>Scorza grattugiata di 2 limoni non trattati<\/li>\n<li>1 pizzico di sale<\/li>\n<\/ul>\n<h3>Il procedimento per biscotti friabili e profumati<\/h3>\n<p>In una ciotola, mescolare la farina con lo zucchero a velo e il sale. Aggiungere la scorza di limone grattugiata. Unire il burro freddo a cubetti e lavorare con la punta delle dita fino a ottenere un composto sabbioso. <strong>Aggiungere il tuorlo e impastare velocemente<\/strong>, giusto il tempo di formare un panetto. Non bisogna lavorare troppo, altrimenti i biscotti vengono duri. Disporli su una teglia rivestita di carta forno. <strong>Infornare a 170 gradi per 10-12 minuti<\/strong>, fino a quando i bordi sono appena dorati. Sfornare e lasciare raffreddare completamente su una gratella.<strong> I biscotti al limone si conservano per una settimana in una scatola di latta<\/strong>. Perfetti da soli, ma anche da inzuppare nel latte o nel t\u00e8.
