La carne \u00e8 bella, magari hai scelto una costata che promette, la padella \u00e8 sul fuoco e tu ti senti sicuro: fiamma alta, due minuti per lato e via. Poi arriva il disastro.<\/strong><\/p>\n<p>Fumo, odore di bruciato, crosta nera e interno ancora troppo crudo. E a quel punto la colpa finisce sempre sulla carne, sul taglio, sulla sfortuna. Quasi mai sulla cosa che, invece, comanda tutto: la padella.<\/p>\n<p>Perch\u00e9 la padella non \u00e8 un contenitore neutro. \u00c8 un materiale che reagisce al calore, lo accumula o lo disperde, lo regge o lo teme. Ti permette di rosolare davvero oppure ti costringe a \u201cbollire\u201d la bistecca nei suoi succhi. E quando parliamo di carne in padella, la differenza tra antiaderente e acciaio non \u00e8 una fissazione da chef: \u00e8 fisica, \u00e8 tecnica, \u00e8 risultato nel piatto.<\/p>\n<h2>Antiaderente o no? In cottura devi fare attenzione a queste cose<\/h2>\n<p>L\u2019antiaderente \u00e8 la padella della quotidianit\u00e0. Uova perfette, frittate che scivolano, pesce delicato, pulizia in un attimo. <strong>Il problema \u00e8 che la bistecca spessa non ragiona come un uovo<\/strong>. Per rosolare serve calore alto e stabile, una superficie che non perda temperatura appena appoggi un pezzo freddo.<\/p>\n<p>L\u2019antiaderente, spesso pi\u00f9 leggero, tende a cedere calore rapidamente: metti la carne e la temperatura cala. Risultato? La carne rilascia liquidi, non fa crosta, e invece di <strong>\u201csigillare\u201d rosola a met\u00e0 e cuoce a vapore<\/strong>. Ti ritrovi una bistecca grigia, morbida, senza quella superficie tostato-croccante che fa la differenza. In pi\u00f9, l\u2019antiaderente non ama le temperature estreme: se lo stressi troppo, accorci la vita della padella e peggiori la resa.<\/p>\n<h3>Acciaio: la crosticina vera, quella che cambia tutto quando cuoci la carne<\/h3>\n<p>L\u2019acciaio spaventa perch\u00e9 \u201csi attacca\u201d. Vero, ma soprattutto quando sbagli temperatura o hai fretta. Non la muovi, non la stacchi: quando la crosta \u00e8 pronta, si stacca da sola. L\u2019acciaio, inoltre, trattiene calore: anche con un taglio spesso, la temperatura non crolla e la rosolatura avviene piena, stabile, profonda.
