Ma c\u2019\u00e8 una versione che li supera in delicatezza e leggerezza: i cannelloni di crespelle. Al posto della sfoglia, una sottile frittatina di uova, farina e latte, cotta in padella e farcita.<\/strong><\/p>\n<p>La crespella non secca in forno, non diventa gommosa, e assorbe la besciamella senza sfaldarsi. L\u2019ho scoperta per caso, quando avevo ospiti all\u2019ultimo minuto e non avevo i cannelloni pronti.<\/p>\n<p>Ho fatto le crespelle in dieci minuti, le ho farcite, e nessuno si \u00e8 accorto della differenza. Anzi, qualcuno ha detto che erano pi\u00f9 buoni. Il segreto \u00e8 avere una padella antiaderente e un po\u2019 di pazienza: la prima crespella \u00e8 sempre da buttare, poi si entra nel ritmo.<\/p>\n<h2>Cannelloni s\u00ec, ma cos\u00ec veloci e deliziosi: la ricetta<\/h2>\n<p>Per un ripieno classico, si usa ricotta, spinaci saltati in padella, parmigiano e noce moscata. Ma se si vuole esagerare, si pu\u00f2 aggiungere prosciutto cotto o funghi trifolati. L\u2019importante \u00e8 che il ripieno non sia troppo umido, altrimenti le crespelle si inzuppano e si rompono. La besciamella, invece, va fatta fluida, quasi liquida, perch\u00e9 deve penetrare tra gli strati senza inondare.<strong> Ecco le dosi per una teglia per 12 crespelle<\/strong>:<\/p>\n<ul>\n<li>200 g di farina 00<\/li>\n<li>3 uova<\/li>\n<li>500 ml di latte<\/li>\n<li>50 g di burro fuso<\/li>\n<li>Un pizzico di sale<\/li>\n<\/ul>\n<p><strong>Per il ripieno:<\/strong><\/p>\n<ul>\n<li>400 g di ricotta di pecora (ben scolata)<\/li>\n<li>300 g di spinaci freschi (o 200 g surgelati)<\/li>\n<li>100 g di parmigiano grattugiato<\/li>\n<li>Noce moscata,<\/li>\n<li>Sale,<\/li>\n<li>Pepe.<\/li>\n<\/ul>\n<p><strong>Per la besciamella:<\/strong><\/p>\n<ul>\n<li>500 ml di latte<\/li>\n<li>50 grammi di burro<\/li>\n<li>50 grammi di farina<\/li>\n<li>Noce moscata,<\/li>\n<li>Sale.<\/li>\n<\/ul>\n<h3>Come assemblarli e cuocerli senza che si sfaldino<\/h3>\n<p>Preparare prima le crespelle: mescolare uova, farina, latte, burro fuso e sale. Cuocere in padella antiaderente un mestolo di pastella per volta, girandole dopo un minuto. Farle raffreddare su un canovaccio. Per il ripieno, lessare gli spinaci, strizzarli bene e tritarli. Preparare la besciamella: sciogliere il burro, aggiungere la farina, poi il latte caldo, mescolando fino ad addensare. Coprire i cannelloni con la besciamella, spolverare con parmigiano. Infornare a 180 gradi per 20-25 minuti.
